在加拿大一研究欲探討 OSA 與老年人腦部白質是否有關,研究招募 65 名 55-85 歲者,並分為對照組、輕度 OSA 及中重度 OSA 共三組,利用 MRI 及擴散張量影像(DTI)進行評估,擴散張量影像為經由水分子於人體平均擴散速度,觀察神經纖維也就是白質的造影,結果發現與對照組相比,OSA 組的自由水擴散(FW)、軸向擴散性(AD)及平均擴散性MD)降低。

劉沁瑜教授擁有十年醫學中心工作經歷後,在大學從事研究、教學,並擔任考選部命題委員。她是少數接受完整臨床營養醫學訓練、具有豐富臨床實務經驗並能進行臨床與基礎研究的學者。在社會實踐方面,她強調實證醫學和科學論證的營養照護觀點,同時也積極參與營養與食品安全相關政策制定、創新創業以及ESG(環境保護、社會責任和公司治理)計劃。 獎項與榮譽:輔仁大學教學績優獎、教學成果獎勵、優良導師獎以及百萬產學合作獎勵等。 著作:《吃出影響力》(2020),商周出版。
