劉沁瑜教授擁有十年醫學中心工作經歷後,在大學從事研究、教學,並擔任考選部命題委員。她是少數接受完整臨床營養醫學訓練、具有豐富臨床實務經驗並能進行臨床與基礎研究的學者。在社會實踐方面,她強調實證醫學和科學論證的營養照護觀點,同時也積極參與營養與食品安全相關政策制定、創新創業以及ESG(環境保護、社會責任和公司治理)計劃。 獎項與榮譽:輔仁大學教學績優獎、教學成果獎勵、優良導師獎以及百萬產學合作獎勵等。 著作:《吃出影響力》(2020),商周出版。
